What would I do without chicken?

What’s on the menu for you today? Chicken seems to be a staple favourite in our household; it's versatile, quick and easy to cook as well as being a lean type of meat. I love vegetarian food but I'm not sure I could live without chicken, partly because my kids like it so much which makes for easier family meals.

Today's lunch was made up of barbecued chicken thighs plus sweet potato fries tossed into an avocado salad. Eating lighter, healthier meals is usually easier when the weather is nice and warm. And if you eat well, you have more energy to exercise and if you exercise you want to eat well - for me healthy food and exercise go hand in hand. That doesn't mean I don't eat chocolate or have a drink or two (trust me I do!) but it's about finding a balance that works for you.

I’ve also discovered that I need to eat better and exercise more than usual in order to cope with the emotional roller coaster that is lockdown. There are so many things outside our control right now but we can control what we put into our bodies and how we move them each day. Start by taking that first step and watch yourself get healthier and stronger each day (whether you like chicken or not!).
